Domain 3 CP Manufacturing Process Study & Storage Study

In domain 3, I learned about manufacturing process study and storage study.
Manufacturing process study has included the following things:

• process of making the product - from receiving raw materials to the packaging and storing.
• application of gmp & haccp
• identify the significant hazard (physical, biological or chemical)
• determine the critical control points
• establish critical limit and the preventive measures
• the design of floor plan

Storage study has taught me the following things:

• The method of carry out storage study
• The preparation of samples - from planing to production of samples
• The physicochemical test - brix, viscosity, pH, color and water activity
• What are the purpose of each test.
• Must record the result including the observation (take photos)
• Estimation of shelf-life 
• Determine the factor that makes the changes during storage.
• For example, the brix reduced because of the fermentation continuous used up the soluble sugar during storage.
