Domain 1 Gold Standard



The first domain after beta concept is Gold Standard Study.
What is gold standard? Gold standard is food product or beverage that can produce in a restaurant kitchen environment and it can be translated to a large scale production environment.
It is developed based on the culinary principles and become a benchmark throughout the commercialization process. Gold standard study is essential step before the product can be commercialized.
Recipes screening has to be carried out in the beginning of gold standard study.
Several recipes have tried out in term of different variables such as types of tea base, brewing method, types of flavoring, type and amount of sweetener and etc..
I learned that group discussion must be done to ensure the correct progression of recipe screening. TGC 4: Communication skills have been achieved where I can communicate well with my members and lecturer. Each steps have to be agreed by all members in group. After each trial, internal sensory result must be recorded as well as the observation of the samples. Proper research also need to be done to ensure the kefir grains able to survive in such condition. Hence, the physical analysis of gold standard is carried out. Moreover, the result of physical analysis is required to be used as a standard for commercial product study.
Besides, I also learned that how to analysis data by SPSS. It is useful tool that help to analysis data. I get to know more about SPSS in this domain in term of the application of test.  I am able to apply theories to practical which improving TGC 1: Discipline Specific Knowledge.
In Domain Presentation, my presentation skill still need a lot of improvement. It gives me a lesson that specific words have to be applied properly and practices are required before presentation.
